As Eid-ul-Adha festivities continue across Pakistan, delicious traditional dishes remain at the heart of every family gathering. From rich, smoky flavors to spicy tawa-cooked delights, meat lovers are always searching for something special to serve during the festive season. 

This Eid, 24NewsHD brings you two mouthwatering recipes Smoky Beef Pasanday and Tawa Kaleji that are packed with bold desi flavors and are perfect for your family feast.

 Smoky Beef Pasanday

This flavorful and tender beef dish combines aromatic spices with a delicious smoky BBQ touch, making it a perfect Eid special meal. To begin, dry roast one tablespoon each of coriander seeds and cumin seeds until fragrant. Using a pestle and mortar, crush the roasted spices together with ginger, garlic cloves, and green chillies to create a fresh aromatic paste.

Next, fry sliced onions until golden brown, allow them to cool, and lightly crush them. Prepare the meat by flattening steak slices of beef or lamb with a meat hammer and cutting them into thin strips.

For the marinade, combine the meat with the prepared ginger-garlic-green chilli paste, fried onions, salt, turmeric powder, red chilli powder, crushed chilli flakes, coriander powder, cumin powder, kachri powder or meat tenderizer, and plain yogurt. Allow the meat to marinate for at least two hours, although overnight marination gives the best flavor and tenderness.

For cooking, heat oil in a pan and sauté julienned ginger before adding the marinated meat. Cook for a few minutes, then pour in water, cover the pan, and let the meat simmer for around 45 minutes or until fully tender. Garnish with freshly chopped coriander, sliced green chillies, and ginger strips.

To achieve a rich smoky BBQ flavor, place a hot charcoal piece in a small foil bowl over the curry, drizzle a little oil on it, cover the pan for a few minutes, and enjoy the irresistible aroma.

 Tawa Kaleji

For lovers of spicy desi flavors, Tawa Kaleji remains one of the most popular Eid delicacies.

Start by thoroughly washing the mutton liver at least three times while rubbing garlic over it to remove any strong smell. Cut the liver into small bite-sized pieces.

Prepare a paste using ginger, garlic, and green chillies. Add dry coriander powder, red chilli powder, turmeric powder, and salt according to taste. Coat the kaleji pieces with the prepared mixture and let them marinate for around 30 minutes.

Heat oil in a pan and add cumin seeds along with chopped onions. Cook until the onions turn soft and translucent. Add the marinated kaleji and cook for 5 to 10 minutes before adding chopped tomatoes. Once the mixture begins releasing oil, sprinkle freshly chopped coriander on top and serve hot.
