Ingredients:

·      3 cucumbers

·      1/2 cup carrots, thinly sliced

·      1/2 cup spring onions, chopped

·      1/2 cup onions, sliced

·      1 tbsp garlic, minced

·      2 tbsp gochugaru (Korean red pepper flakes)

·      Substitute: 1 tbsp red chilli powder

·      3–4 tbsp salt

·      1 tbsp soy sauce

·      1 tbsp sesame seeds

·      1 tbsp vinegar

·      1 tbsp honey

Start by washing the cucumbers and making four lengthwise cuts while keeping the base intact. Sprinkle salt generously over the cucumbers and let them rest for one hour. After an hour, rinse the cucumbers thoroughly and gently squeeze out any remaining water. Set them aside.

In a mixing bowl, combine sliced carrots, onions, and spring onions. Add garlic, gochugaru (or red chilli powder), sesame seeds, soy sauce, vinegar, and honey. Mix everything well using your hands until the vegetables are fully coated with the spicy seasoning.

Carefully stuff the seasoned mixture into the slits of each cucumber. Once filled, place the cucumbers in a container and refrigerate overnight to allow the flavours to fully develop. Enjoy it!
